After my mom died everyone converged on the house, and in short order a lot of other things fell apart. No one went home for a long time. I made some strange decisions about what to bring when I loaded the car that initial morning &#8211; watercolors, a stack of cookbooks, my camera, a favorite knife, a huge bin full of spices. I thought about bringing my favorite donabe, but was worried it could break and grabbed my pasta machine instead. Not a bad call &#8211; a lot of pasta was made! My nephew is especially enthusiastic about it, so I decided to branch out to a new shape &#8211; cavatelli.<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-1.jpg?w=620&amp;auto=format\" alt=\"Homemade Cavatelli Pasta\" border=\"0\" \/><br \/>\nThe move to cavatelli was partially out of necessity. My workhorse, <a href=\"https:\/\/www.marcato.it\/en\/product\/manual_machines\/atlas-150\">the Atlas pasta machine<\/a>, has issues at my dad\u2019s house. There is nothing to clamp it on to. Every countertop and table is too thick. It\u2019s maddening. I noticed the clamp on the cavatelli maker seemed like it might be wider, so I thought we\u2019d try it instead. It is also worth mentioning, I&#8217;ve been meaning to buy a cavatelli maker for <em>years<\/em>. <a href=\"https:\/\/www.ragazzasf.com\/\">Ragazza<\/a>, a sweet little Italian spot, was just up the street from where we lived in San Francisco. The owner Sharon tipped me off to how she made their cavatelli from scratch with a <a href=\"https:\/\/cucinapro.com\/shop-2\/cucinapro-530-cavatelli-maker\/\">little hand-cranked machine<\/a> (something like this one) &#8211; and I&#8217;ve meant to get my hands on once since. This seemed like the right time.<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-2.jpg?w=620&amp;auto=format\" alt=\"Pasta Dough Rolled thin for Cavatelli\" border=\"0\" \/><\/p>\n<h2 class=\"p1\">About this Cavatelli Recipe<\/h2>\n<p class=\"p1\">After a good amount of experimenting, I&#8217;ve settled on the following as my basic cavatelli dough and technique. Once you master it, the variations you can explore are endless (see below). The cavatelli machine likes pasta dough that\u2019s not-too-wet and not-too-dry. If you hit the sweet spot, you\u2019ll be able to crank out a pound of cavatelli <em>incredibly<\/em> quickly. If your dough is getting stuck in your machine, pat it with flour, dust off any excess, and try again. You\u2019ll eventually get a feel for it!<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-3.jpg?w=620&amp;auto=format\" alt=\"Homemade Cavatelli and Cavatelli Machine\" border=\"0\" \/><\/p>\n<h2 class=\"p1\">What if I don\u2019t have a Cavatelli Machine?<\/h2>\n<p class=\"p1\">Not a big deal! You can make it by hand a number of other ways. Here\u2019s a page that demonstrates <a href=\"https:\/\/www.finecooking.com\/article\/4-ways-to-shape-cavatelli-or-gnocchi\">how to shape cavatelli with a ridged board, fork, or grater<\/a>. I\u2019ve also seen it shaped traditionally in Puglia <a href=\"https:\/\/www.youtube.com\/watch?v=ikMGXhymt3s\">using something like a butter knife<\/a>.<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-4.jpg?w=620&amp;auto=format\" alt=\"Close-up Photo of Cavatelli\" border=\"0\" \/><\/p>\n<h2 class=\"p1\">What Flour Should I Use?<\/h2>\n<p class=\"p1\">Cavatelli is traditionally made with durum wheat semolina flour. But, if you don\u2019t have that on hand, don\u2019t let it stop you. Last week I was out of semolina flour, so the cavatelli you see pictured here was made with \u201c00\u201d flour. \u201c00\u201d is <span class=\"s1\">powder-fine and made with low gluten, soft wheat flour. If you don\u2019t have \u201c00\u201d you can certainly use all-purpose flour.<\/span> A long way of saying, make cavatelli with 100% semolina flour if you have it, or use equal parts \u201c00\u201d and semolina, or just \u201c00&#8243;\u2026.go for the all-purpose flour if that&#8217;s what you have.<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-5.jpg?w=620&amp;auto=format\" alt=\"Homemade Cavatelli with Roasted Winter Vegetables\" border=\"0\" \/><\/p>\n<h2 class=\"p4\"><span class=\"s2\">How To Freeze Cavatelli<\/span><\/h2>\n<p class=\"p5\"><span class=\"s2\">Freezing is my preferred method of storing any cavatelli I\u2019m not cooking immediately. Arrange freshly made, uncooked cavatelli across a floured baking sheet. Try to make sure they\u2019re in a single layer. Freeze for a couple of hours, and then transfer to double layer plastic bags. You can freeze for up to a couple of months. And you can cook straight from the freezer. No need to thaw, just dump the cavatelli into boiling salted water, and increase the cooking time a bit.<br \/>\n<img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/HOMEMADE-CAVATELLI-6.jpg?w=620&amp;auto=format\" alt=\"Roasted Vegetables\" border=\"0\" \/><\/span><\/p>\n<h2 class=\"p5\"><span class=\"s2\">Cavatelli Variations<\/span><\/h2>\n<p class=\"p5\"><span class=\"s2\">In the recipe below you can see how you can tweak basic cavatelli pasta dough by adding different seasonings and spices. I wanted to make a bright, sunny plate of pasta with lots of roasted yellow and orange vegetables and ingredients like cauliflower, golden yellow beets, and winter squash (pictured above). I added turmeric and black pepper to the pasta dough for a little flavor, color, and boost. It&#8217;s even better when you have others around to help, taking turns in shifts.
