You won\u2019t be sad about it! The inspiration? One of the condiments that survived my recent refrigerator scouring was a three-quarters full tube of harissa. It\u2019s the beautiful brick red, earthy, and often potent North African spice paste. I earmarked it for a spaghetti dish I had in mind. Whole wheat spaghetti, inky black olives, kale, and toasted nuts tossed in a pan to tangle with a garlic-charged harissa and olive oil sauce. Little flecks of lemon zest brighten each bite. I did it, and it\u2019s wonderful.<\/span><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/harissa-spaghetti-v.jpg?w=620&amp;auto=format\" alt=\"spaghetti tossed with harissa oil, kale, and walnuts served on a platter\" width=\"620\" border=\"0\" \/><\/p>\n<h2 class=\"p1\"><span class=\"s1\">Choose your Spaghetti<\/span><\/h2>\n<p class=\"p1\"><span class=\"s1\">You can use whatever spaghetti you love here, of course. Keep in mind, there are many interesting pastas to explore these days. They\u2019re made with everything from red lentils or chickpeas, whole wheat to quinoa. I love the added nutritional punch you get from using some of these. The spaghetti below is made from farro and add wonderful dimension to the overall dish (<a href=\"https:\/\/shopfelicettipasta.com\/collections\/monograno-felicetti\/products\/monograno-felicetti-farro-spaghetti-pasta\">this one<\/a>).<\/span><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/harissa-spaghetti-1.jpg?w=620&amp;auto=format\" alt=\"harissa spaghetti ingredients arranged in bowls on counter\" width=\"620\" border=\"0\" \/><\/p>\n<h2 class=\"p1\"><span class=\"s1\">Let&#8217;s Talk Harissa<\/span><\/h2>\n<p class=\"p1\"><span class=\"s1\">Keep in mind as you head into this recipe that the range of harissas available for purchase is vast &#8211; trust your taste buds, and if any of you have favorite brands, give a shout in the comments. One tube might be tastelessly tomato-y, the next tongue-torchingly hot. That being said, the best road to a great harissa is to <span class=\"s2\">make yo<\/span><span class=\"s2\">ur own<\/span>, but I&#8217;d be lying if I said I&#8217;m religious about it &#8211; hence, the tube of red in my refrigerator door.<br \/><img decoding=\"async\" src=\"https:\/\/images.101cookbooks.com\/harissa-spaghetti-2.jpg?w=620&amp;auto=format\" alt=\"spaghetti dinner tossed with harissa oil, kale, and walnuts on a table being served\" width=\"620\" border=\"0\" \/><\/span><\/p>\n<h2 class=\"p1\"><span class=\"s1\">Make Your Own Harissa<\/span><\/h2>\n<p class=\"p1\"><span class=\"s1\">I don\u2019t have a homemade harissa on 101 Cookbooks at the moment. But a number of people have mentioned favorite recipes in the comments.<\/span><\/p>\n<ul>\n<li class=\"p2\"><span class=\"s1\">ValHalla: &#8220;I use Deborah Madison\u2019s recipe from Vegetarian Cooking for Everyone. (There\u2019s also an amazing stew with harissa in that book.&#8221;<\/span><\/li>\n<li class=\"p2\">Bryan: &#8220;I swear by the Zuni cookbook recipe for <i style=\"font-size: revert;color: initial;font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif\">harissa<\/i><span style=\"font-size: revert;color: initial;font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif\">. it\u2019s totally labor intensive but totally worth it. Plus, it\u2019s a great excuse to finally use up a significant number of spices from the pantry. It\u2019s full flavored, well balanced, a little spicy, and the recipe makes a ton. Perfect for freezing.&#8221;<\/span><\/li>\n<li class=\"p2\">I&#8217;ve also had good results with this recipe<span style=\"font-size: revert;color: initial;font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif\">.<\/span><\/li>\n<li class=\"p2\">Kitty also mentioned the following about buying harissa in jars instead of tubes. \u201cThere are many kinds of harissa, and many degrees of \u201cheat\u201d for the paste. I would recommend purchasing a jarred harissas rather than the one in the tube.
